It is a prickly shrub 1 to 3 meters high and has fragile branches. The height of some of its specimens reaches 6 meters in favorable environments. The plant has one base and its flowers are bisexual, meaning that each flower has both male and female organs. The barberry flower is compound and consists of 3 pieces, which are arranged in two circular rows. There are 6 barberry flags that are placed in 2 rows of 3. The leaves are leathery and do not have a high level of stem or fin. These leaves are smooth in some varieties and toothed in some. The barberry plant is prickly and its thorns are formed by the transformation of the leaves, which become wider at the junction of the thorns with the branch. It has wild and cultivated varieties for food consumption and ornamental varieties.

To produce the puffy type of Barberries, the branches of the plant is being cut off with the fruit on it and then it will be put in a place with continuous air stream from four sides. The drying process normally takes 4 to 5 months. After the Barberries are dried they are being separated from the branches by a machine and then passed through a vacuum machine to remove foreign objects. Since this type of barberry is not exposed to the sun its natural light red color and shape is preserved and is the most desirable types of barberry, because it is also healthier.Although it takes longer time to dry (in comparision with sun-dried type), these are benefits of this method:1. Color of this type is light red and different with sun dried type which is more crimson red.2. Fruit Shape stays bloated and not squeezed.3. More nutrition is preserved and makes it healthier.

Barberry is a plant native to Iran that can be found in other countries. Barberry trees that exist in Iran are all of the same type, the difference of water, air and soil of each region affects the type of barberry, the properties and characteristics of that barberry. But according to the climatic conditions of our country, two types of barberry are produced in black and red colors.
